Habanero - Homemade Sauces


Here are some of my favorite recipes & some of my customers favorite recipes.  If you have a favorite recipe & you'd like to share your recipe with everyone email your recipe to me & I'll put it on my site for everyone to enjoy!!

 

 

Hawaiian Pork Burgers from Tracy in Granite Bay, Ca.

1 can (8oz.) crushed pineapple, drained
1/3 cup Apple Bacon Mesquite
1 tsp. soy sauce
1 lb. ground pork
1/4 cup plain dried bread crumbs
2 tbsp. minced onion
1 tbsp. each minced fresh ginger & packed light brown sugar
1/8 tsp. each cayenne & salt
4 English muffins, split & toasted
8 large fresh basil leaves

Prepare grill for med. heat(350-450).  In small bowl, combine pineapple, sauce, & soy sauce.  Set aside.  In a medium bowl combine pork, bread crumbs, onion, ginger, sugar, cayenne, & salt.  Shape mixture into 4 patties.  Grill, turning once, until slightly charred & cooked the way you like them, about 7 minutes.  Put each burger on a muffin half.  Top each with 2 basil leaves, & about 2 tbsp. sauce & the muffin top.  YUMMMMMY!!!!  Thanks Tracy

 

Pork Butt Roast / made with a beer (this is my favorite recipe)

Pour any beer into the bottom of a pan, put a wire rack over the top of the pan & put a seasoned pork butt roast on top of the rack & wrap tight in foil so the steam doesn't escape.  Put into the oven @325...1 hr. or more for each pound.  When it's all cooked take off the foil, pour off the fluid & put the roast into the bottom of the pan & pour sauce over roast & put back into oven until it starts to carmelize & do this a few times until you get it to your taste...EXCELLENT!!!  I serve this with sweet potatoes & a green bean casserole.  You can use: Apple Bacon Mesquite, Habanero, Original, Garlic or Smokey Lime Chipotle.

 

Lettuce Wraps

1lb. cut boneless skinless chicken breasts
3-4 chopped scallions
1 can diced water chestnuts
anyvegetables diced

 Cut up chicken into small pieces & sautee in pan till cooked.  Add scallions, water chestnuts & vegetables.  When it's almost cooked add sauce & continue cooking till cooked.  Use Iceberg or romaine lettuce...fill up & eat!!  You can also use tortilla wraps.  Use Ginger Wasabyaki or Apricot Ginger Teriyaki 

      

Pork & Vegetables  from my customer Carol in San Leandro, Ca.

2 each cut-up--zuchinni, carrots & broccili
1 onion diced
2 cups cubed cooked pork
3tbsp. Apple Bacon Mesquite

Sautee pork in olive oil, add vegetables & when it's all cooked add 3 tbsp sauce...serve over noodles or rice. Sweet Carol!!

 

Chicken, Rice & Vegetables

1 lb. boneless skinless breasts
white or brown rice
any vegetables you like

Marinate chicken breasts in pan as little as 1 hr. or allday...Bake @325 turning a few times to even cook.  When chicken is cooked put a slab of cheddar cheese on top & put back in oven till it bubbles on it's own & serve over rice & vegetables.  You can use: Original, Garlic, Habanero, Smokey Lime Chipotle or Apricot Ginger Teriyaki.

 

 Beef Loin Top Sirloin Roast 3-4 lbs.

Marinate roast in bag with Zinfandel Tri-Tip marinade 2-3hrs. or longer.  Pour marinade from bag into the bottom of a pan & put a wire rack over pan & put seasoned roast on top of rack & wrap in foil so no steam escapes.  Bake @325 about 1-1 1/2 hrs.  In measuring cup put 1/4 cup water &1/2 cup flour & mix.  When roast is done add flour & water mixture to make gravy...bring to a boil.  Serve with mashed potatoes & salad or vegetables.

 

Pulled Pork Sandwiches in a crockpot

Put a Pork Butt Roast in a crock pot & you can add a beer, apple cider or any carbonated drink...cook allday.  Pour off excess  juices & add sauce (Apple Bacon Mesquite is the best) & pull meat with a fork, cook to taste & serve over a crunchy french roll.

 

Meatloaf

1 1/2 lb. burger
1/2 cup milk
1 egg
3 tbsp. sauce (original, garlic or habanero)
1 cup french fried onions
1/2 tsp. each of salt & pepper

Mix all ingredients togeather & bake @350 for 1 hour.  When it's all cooked cover top of meatloaf with sauce & put back in oven till it carmelizes then cover with more french fried onions & brown 5 min.  Serve with mashed potatoes & vegetables.


Pineapple Sweet & Sour Chicken

2 cups white rice, uncooked

1 can (20oz.) Pineapple Chunks

2 Tbsps. vegetable oil

1 mediun green or red bell pepper, cut into chunks

1 medium onion, cut into chunks

1/2 cup muchrooms, sliced

1 lb. boneless skinless chicken, cut into 1-inch pieces

1 cup sauce (original, garlic, habanero, smokey lime chipotle or apple bacon mesquite)

2 tbsps. less sodium soy sauce

Cook rice according to package directions.

Drain pineapple;reserve 2 tbsps juice

Heat oil in large skillet over medium heat. Add peppers, onions & mushrooms, cook until vegetables are tender crisp.  Remove vegetable from skillet & set aside.

Cook chicken in same skillet until chicken is browned & fully cooked.  Add vegetables & sauce, soy sauce, pineapple chunks & reserved juice.  Heat through...Serve over hot rice.

 

Sweet & Spicy Stir Fry Cabbage

Chop 1 head of cabbage & 1 large onion.  Slice 5 medium zuchinnis, & saute in a small amount of oil & season to taste.  Add 1/2 cup sauce (habanero or smokey lime chipotle)  Cover & steam till soft.  You can add pre cooked chicken or pork...serve over rice.

 

Pork Chops with Lime Chipotle Sauce

4 boneless pork loin chips

3/4 cup Smokey Lime Chipotle

3 tbsp. orange juice

1 tsp. Art of Chipotle Gourmet Paste

Snipped fresh cilantro (optional)

Broil or pan-fry pork chops in a skilled coated with nonstick cooking spray over medium heat for 5 to 7 minutes on each side or until cooked.  While pork is cooking, stir together remaining ingredients in a small bowl.  Cover & microwave on HIGH for 1 minute.  Let cool slightly, them serve over pork.  Top with cilantro if you like. 

 

Grilled Country-Style Ribs

2-1/2 to 3lbs. country style pork ribs

1-1/2 tsp Lawry's seasoned salt

1-1/2 tsp Lawry's garlic salt

1 1/2-2 cups sauce (any of my  sauces will work!!)

Preheat oven to 325.  In 13x9 baking dish, arrange ribs. Season with Seasoned Salt & Garlic Salt & set aside.  Combine remaining ingredients.  Evenly spoon 1/2 cup sauce over ribs.  Bake covered 2 hours or until ribs are tender...drain.  Grill ribs

turning occasionally & brushing with remaining sauce about 10-15 minutes...until they are browned.

 

Barbecued Brisket of Beef

4-6 lbs brisket of beef-rub with 2 tbs. liquid smoke (mesquite) - cover & refrigerate over night.  Place large double thickness of heavy foil in roaster pan.  Place meat in pan & season to taste, add 1 cup Apple Bacon Mesquite.  Seal foil airtight & bake 4-5 hours at 325 degrees.

 

Ham Glaze

Spread Deb's Apple Bacon Mesquite over your ham the last 30 minutes of cooking.  Or for a spicy ham spread  Deb's Habanero

or Smokey Lime Chipolte over your ham the last 30 minutes.

 

Ribs in Crockpot

Place season ribs in crock pot.  Pour Deb's sauce over ribs.  Let cook slowly for several hours.  Delicious.

 

 

REMEMBER---Sauce will burn over open hot flame...BBQ it over lower heat & BBQ it slower for a moist meat & then add Deb's sauce to enhance that wonderful flavor of meat!!
